- 2–3 pita breads or flatbreads
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/2 cup olives
- 1/2 cup roasted red peppers
- 1/4 cup feta cheese, crumbled
- Fresh parsley, chopped
- Lemon wedges
Instructions
- Marinate the Chicken: In a bowl, mix olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper. Add chicken and toss to coat. Marinate for 20–30 minutes.
- Cook the Chicken: Thread chicken onto skewers or cook in a grill pan over medium-high heat for 8–10 minutes until golden and fully cooked.
- Prepare the Feta Dip: In a blender or bowl, combine feta, Greek yogurt, olive oil, lemon juice, garlic, salt, and water. Blend until smooth and creamy.
- Assemble the Grazing Board: Warm pita breads until soft and lightly toasted. Arrange grilled chicken on a large serving board. Place feta dip in a small bowl at the center. Surround with pita, cherry tomatoes, cucumber, red onion, olives, roasted red peppers, and extra feta. Garnish with fresh parsley and lemon wedges.
