For the Chicken Souvlaki:

- 1/4 tsp black pepper
For the Garlic Feta Dip:
- 1/2 cup crumbled feta cheese
- 2 tbsp Greek yogurt
- 1 tbsp olive oil
- 1 clove garlic, minced
- Juice of 1/2 lemon
- 1 tbsp fresh parsley, chopped
For the Board:
- 1 cup cherry tomatoes
- 1 cucumber, sliced
- 1/4 red onion, thinly sliced
- Olives, a handful
- Pita bread, cut into triangles
Instructions
- Marinate the Chicken: In a bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken cubes and marinate for at least 20 minutes.
- Cook the Chicken Souvlaki: Thread chicken onto skewers. Grill or broil over medium heat for 10–12 minutes, turning occasionally, until fully cooked (internal temperature 165°F / 74°C).
- Prepare the Garlic Feta Dip: In a small bowl, combine feta, Greek yogurt, olive oil, garlic, lemon juice, and parsley. Mix until smooth.
- Assemble the Grazing Board: Arrange grilled chicken skewers, cherry tomatoes, cucumber, red onion, olives, and pita triangles on a large serving board. Serve with the garlic feta dip on the side.
