  • 1 tbsp fresh dill, chopped
  • Salt to taste

For the Board Base:

  • 2 cups pita bread, warmed
  • 1 cup hummus

For the Mezze Add-ons:

  • 1 cup cherry tomatoes
  • 1 cucumber, sliced
  • 1/2 cup Kalamata olives
  • 1/2 red onion, thinly sliced

For Garnish:

  • 2 tbsp olive oil
  • Fresh parsley
  • Lemon wedges

Instructions

  1. Marinate the Chicken: In a bowl, whisk together olive oil, garlic, lemon juice, red wine vinegar, oregano, paprika, cumin, salt, and pepper. Add chicken and marinate for at least 30 minutes, preferably overnight.
  2. Skewer and Grill: Thread marinated chicken onto soaked skewers. Grill over medium-high heat for 10–12 minutes, turning occasionally, until fully cooked and slightly charred.
  3. Prepare Tzatziki: In a bowl, combine Greek yogurt, cucumber, olive oil, lemon juice, garlic, dill, and salt to make tzatziki. Chill until ready to serve.
  4. Assemble the Board: Warm pita bread until soft and slightly golden. Arrange grilled chicken skewers on a large board with pita, hummus, and tzatziki. Surround with fresh vegetables, olives, and onion slices.
  5. Garnish and Serve: Drizzle olive oil over the board and garnish with fresh parsley and lemon wedges. Serve immediately.
