- 1 tbsp lemon juice
- 1 tbsp fresh dill, chopped

- 2 cups cooked rice or quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup kalamata olives
- 1 cup chickpeas (optional)
- 1/2 cup feta cheese, crumbled
- Fresh parsley or dill for garnish
- Lemon wedges
Instructions
- Marinate the chicken: Mix olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper. Marinate chicken for at least 30 minutes.
- Grill the chicken: Grill chicken over medium-high heat for 5–7 minutes per side until fully cooked. Let rest, then slice.
- Prepare the tzatziki sauce: Mix Greek yogurt, cucumber, garlic, lemon juice, olive oil, dill, salt, and pepper until smooth and creamy.
- Assemble the power bowls: Start with rice or quinoa as the base. Add chicken, tomatoes, cucumber, red onion, olives, chickpeas, and feta. Drizzle with tzatziki sauce.
- Garnish and serve: Garnish with fresh herbs and serve with lemon wedges.
