For the Chicken:
- 2 large chicken breasts
- 1 cup breadcrumbs
- 1/2 cup feta cheese, finely crumbled
- 1/2 cup grated Parmesan cheese
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp paprika
- Salt and black pepper to taste
- 2 eggs, beaten
- 1/2 cup all-purpose flour
- 2 tbsp olive oil
For the Hot Honey Lime Sauce:
- 1/4 cup honey
- 1–2 tsp hot sauce
- 1 tbsp lime juice
- 1 tsp lime zest
For Garnish:
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh cilantro, chopped
- Lime wedges
Instructions
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Slice the chicken breasts horizontally to create thinner cutlets if needed.
- Prepare a breading station with flour, beaten eggs, and a mixture of breadcrumbs, feta, Parmesan, oregano, basil, paprika, salt, and pepper.
- Coat each chicken piece in flour, dip in eggs, then coat with breadcrumb mixture.
- Place the coated chicken on the baking sheet and drizzle with olive oil.
- Bake for 22–25 minutes, flipping halfway, until golden and crispy.
- In a small saucepan, warm honey with hot sauce, lime juice, and zest until combined.
- Drizzle the hot honey lime sauce over the crispy chicken.
- Garnish with fresh parsley, cilantro, and serve with lime wedges.
