For the Chicken:
- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp dried oregano

- 1 cup cooked quinoa or brown rice
- 1 cup roasted vegetables (zucchini, bell pepper, cherry tomatoes)
For the Herb Feta:
- 1/2 cup crumbled feta cheese
- 1 tbsp olive oil
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh dill, chopped
For the Tzatziki:
- 1/2 cup Greek yogurt
- 1/2 cucumber, grated
- 1 clove garlic, minced
- 1 tbsp lemon juice
- 1 tsp olive oil
- Salt and pepper to taste
For the Hot Honey Drizzle:
- 1 tbsp honey
- 1/4 tsp red pepper flakes (optional)
Instructions
- Marinate and Cook the Chicken: In a bowl, combine olive oil, paprika, oregano, salt, pepper, and lemon juice. Coat chicken and marinate at least 20 minutes. Cook over medium heat for 5–6 minutes per side until fully cooked (internal temperature 165°F / 74°C). Slice after resting 5 minutes.
- Prepare the Roasted Vegetables: Toss zucchini, bell pepper, and cherry tomatoes with olive oil, salt, and pepper. Roast at 400°F (200°C) for 18–20 minutes until tender.
- Prepare the Herb Feta: Combine feta, olive oil, parsley, and dill in a small bowl. Mix gently.
- Prepare the Tzatziki: Mix Greek yogurt, grated cucumber, garlic, lemon juice, olive oil, salt, and pepper until smooth.
- Prepare the Hot Honey Drizzle: Warm honey slightly and stir in red pepper flakes if desired.
- Assemble the Bowl: In a large bowl, layer cooked quinoa or rice, roasted vegetables, and sliced chicken. Top with herb feta, a dollop of tzatziki, and drizzle with hot honey.
