- 2 tbsp honey
- 1 tbsp olive oil
- 1 tsp Dijon mustard

- 1 tbsp fresh parsley, chopped
- 1/2 tsp black pepper
Instructions
- Prepare the Chicken: Preheat oven to 400°F (200°C). Place chicken breasts in a baking dish and season with olive oil, salt, pepper, and thyme.
- Prepare the Sauce: In a small bowl, mix cranberry sauce, honey, olive oil, Dijon mustard, and lemon juice.
- Bake the Chicken: Pour the honey cranberry sauce over the chicken. Bake for 20–25 minutes until the chicken is fully cooked (internal temperature 165°F / 74°C).
- Add the Ricotta Topping: Remove from the oven and add dollops of ricotta cheese on top. Return to the oven for 5 minutes until slightly warmed.
