  • 2 tbsp honey
  • 1 tbsp olive oil
  • 1 tsp Dijon mustard
  • Juice of 1/2 lemon

  • 1 tbsp fresh parsley, chopped
  • 1/2 tsp black pepper

Instructions

  1. Prepare the Chicken: Preheat oven to 400°F (200°C). Place chicken breasts in a baking dish and season with olive oil, salt, pepper, and thyme.
  2. Prepare the Sauce: In a small bowl, mix cranberry sauce, honey, olive oil, Dijon mustard, and lemon juice.
  3. Bake the Chicken: Pour the honey cranberry sauce over the chicken. Bake for 20–25 minutes until the chicken is fully cooked (internal temperature 165°F / 74°C).
