For the crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the cheesecake filling:
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1 cup chocolate chips
- 1/2 cup salted caramel sauce
- Sea salt (for garnish)
Instructions
- Preheat the oven and prepare the crust: Preheat the oven to 325°F (160°C). Line a cupcake pan with paper liners. Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of each liner to form the crust.
- Prepare the cheesecake filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Add vanilla, sour cream, and mix until smooth.
- Complete the filling: Stir in chocolate chips and half of the salted caramel sauce. Fill each cupcake liner about 3/4 full with cheesecake filling.
- Bake the cheesecakes: Bake for 15-20 minutes until the center is slightly jiggly. Let cool in the oven for 10 minutes.
- Chill and serve: Chill in the fridge for at least 2 hours. Drizzle with remaining caramel and sprinkle with sea salt before serving.
