For the Herb Feta:

  • 1/2 cup crumbled feta cheese
  • 2 tbsp Greek yogurt
  • 1 tbsp olive oil
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • Juice of 1/2 lemon

For the Tzatziki:

  • 1/2 cup Greek yogurt
  • 1/2 cucumber, grated and squeezed dry
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • 1 tbsp fresh dill, chopped
  • Juice of 1/2 lemon
  • 1/2 tsp salt

Instructions

  1. Marinate the Chicken: In a bowl, mix olive oil, paprika, cumin, oregano, garlic powder, salt, pepper, and lemon juice. Coat the chicken and marinate for at least 20 minutes.
  2. Cook the Chicken: Grill or cook in a skillet over medium heat for 5–6 minutes per side until fully cooked (internal temperature 165°F / 74°C). Let rest, then slice.
  3. Prepare the Herb Feta: In a small bowl or food processor, blend feta, Greek yogurt, olive oil, parsley, dill, and lemon juice until smooth and creamy.
  4. Prepare the Tzatziki: In a bowl, mix Greek yogurt, grated cucumber, garlic, olive oil, dill, lemon juice, and salt until well combined.
  5. Assemble the Bowls: Divide quinoa or rice into bowls. Top with cherry tomatoes, cucumber, red onion, olives, and sliced chicken. Add dollops of herb feta and tzatziki.
  6. Serve: Serve immediately as a fresh and flavorful Mediterranean-inspired power bowl.
