  • 1 clove garlic, minced

  • Salt & pepper to taste

Instructions

  1. Prepare the Chicken: In a bowl, mix olive oil, paprika, garlic powder, cumin, oregano, salt, and pepper. Coat the chicken evenly. Heat a grill pan or skillet over medium heat and cook chicken for 5–6 minutes per side until golden and fully cooked. Let rest, then slice.
  2. Make the Herb Feta Sauce: In a bowl, combine feta cheese, Greek yogurt, olive oil, lemon juice, garlic, herbs, oregano, salt, and pepper. Mix until smooth and creamy.
  3. Assemble the Bowl: Start with rice or couscous as the base. Top with sliced chicken, toasted pita wedges, cucumber, tomatoes, red onion, olives, and parsley.
