For the Chicken

- 2 pita breads, cut into wedges

- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/2 cup chickpeas
- 1/4 cup olives
- Fresh herbs for garnish
Instructions
- Marinate the Chicken: In a bowl, mix olive oil, lemon juice, garlic, oregano, paprika, salt, and black pepper. Marinate chicken for at least 30 minutes.
- Cook the Chicken: Grill or pan-cook chicken over medium-high heat for 5–6 minutes per side until fully cooked. Let rest, then slice.
- Prepare the Lemon Feta Sauce: In a blender or bowl, combine feta, Greek yogurt, olive oil, lemon juice, garlic, herbs, and black pepper. Blend until smooth and creamy.
- Assemble the Bowl: Warm pita wedges. Assemble bowl with rice or quinoa as the base. Add chicken, pita wedges, tomatoes, cucumber, red onion, chickpeas, and olives.
- Drizzle with Sauce: Drizzle generously with lemon feta sauce.
- Garnish and Serve: Garnish with fresh herbs and serve immediately.
