For the Toppings:

  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup shredded lettuce
  • 1/4 cup olives (optional)
  • Fresh parsley, chopped
  • Extra feta crumbles

Instructions

  1. Marinate the Chicken: In a bowl, combine olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper. Add chicken and toss to coat. Marinate for 20–30 minutes.
  2. Cook the Chicken: Heat a skillet or grill pan over medium-high heat and cook chicken for 8–10 minutes until golden and fully cooked.
  3. Make the Spicy Feta Sauce: In a blender or bowl, combine feta, Greek yogurt, olive oil, lemon juice, hot sauce, garlic, water, and salt. Blend until smooth and creamy.
  4. Prepare the Base: Toast pita pieces lightly until warm and slightly crispy. Assemble bowls with pita pieces and optional rice or quinoa.
  5. Assemble the Bowl: Top with chicken, cherry tomatoes, cucumber, red onion, lettuce, olives, and feta. Drizzle generously with spicy feta sauce.
