For the Rice Base:
- 2 cups cooked white rice
- 1 tbsp lime juice
- 1 tbsp chopped cilantro

- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup black beans, drained and rinsed
- 1/4 cup red onion, finely chopped
Instructions
- Marinate the Chicken: In a bowl, mix olive oil, garlic, lime juice, chili powder, smoked paprika, salt, and pepper. Coat chicken and marinate for at least 30 minutes.
- Cook the Chicken: Cook chicken in a skillet or grill over medium heat for 6–7 minutes per side until fully cooked. Let rest, then slice.
- Prepare the Street Corn: In a pan, cook corn until slightly charred. Remove from heat and mix with mayonnaise, sour cream, cotija cheese, lime juice, chili powder, and salt.
- Prepare the Rice Base: In a bowl, toss cooked rice with lime juice, cilantro, and salt.
