Instructions

  1. Preheat oven and prepare muffin tin: Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Prepare muffin batter: In a large bowl, whisk together pumpkin, eggs, brown sugar, oil, and milk until smooth. In another bowl, combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Fold dry ingredients into the wet mixture just until combined.
  3. Bake the muffins: Fill muffin cups 3/4 full with the batter and bake for 18–22 minutes or until a toothpick inserted comes out clean. Allow the muffins to cool completely.
  4. Make the frosting: In a bowl, beat cream cheese and butter until fluffy. Add powdered sugar, cinnamon, and salt, and mix until smooth.
  5. Frost the muffins: Generously frost the cooled muffins with the cream cheese frosting.
