Red Velvet Cake:

Instructions
- Prepare Red Velvet Cake: Preheat oven to 325°F (165°C). Prepare red velvet cake mix as directed; divide batter between two greased 9-inch round pans and bake for 20–25 minutes. Cool completely.
- Make Cheesecake Layer: Beat cream cheese, sugar, eggs, and vanilla until smooth. Pour into a greased 9-inch springform pan and bake for 40–45 minutes. Chill completely.
- Assemble: Layer one red velvet cake, the cheesecake, then the second cake layer. Top with fresh strawberries and optional whipped cream.
