This Roasted Butternut Squash, Sweet Potato & Carrot Bake with Whipped Feta, Walnuts & Balsamic Honey Drizzle is a delightful dish that combines the earthy sweetness of roasted vegetables with the tangy creaminess of whipped feta, crunchy walnuts, and a sweet balsamic honey glaze.

For the Roasted Vegetables

  • 2 cups butternut squash, peeled and cubed
  • 2 medium sweet potatoes, cubed
  • 3 large carrots, sliced
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For the Whipped Feta

  • 1/2 cup feta cheese, crumbled
  • 1/3 cup Greek yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic
  • Black pepper to taste

For the Balsamic Honey Drizzle

  • 3 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon water

Toppings

  • 1/2 cup walnuts, toasted and roughly chopped
  • Fresh parsley or thyme

Instructions

  1. Preheat oven to 200°C (400°F) and line a baking tray with parchment paper. In a large bowl, toss butternut squash, sweet potatoes, and carrots with olive oil, garlic powder, thyme, smoked paprika, salt, and black pepper.
  2. Spread evenly on the tray and roast for 30–35 minutes until tender and caramelized.
  3. In a blender or bowl, combine feta, Greek yogurt, olive oil, lemon juice, garlic, and black pepper. Blend until smooth and creamy.
  4. In a small saucepan, combine honey, balsamic vinegar, and water. Simmer for 2–3 minutes until slightly thickened.
  5. Spread whipped feta on a serving dish or plate. Top with roasted vegetables.
  6. Drizzle with balsamic honey glaze and sprinkle with toasted walnuts.
  7. Garnish with fresh herbs and serve warm.
